Prepare the Fish
In a shallow bowl, whisk together the eggs and buttermilk. In another bowl, mix the cornmeal, flour, salt, and black pepper. Dip each haddock fillet into the egg mixture, then coat with the cornmeal mixture.

Fry the Fish
Heat vegetable oil in a large skillet over medium-high heat. Fry the coated haddock fillets for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Collard Greens
In a separate pot, bring water to a boil. Add the collard greens and cook for about 10-15 minutes until tender. Season with salt and pepper to taste.

Serve
Plate the fried fish alongside the smoked gouda grits and collard greens. Serve with chipotle mayo on the side.
