Method

Fried Chicken

    Marinate the Chicken

    In a bowl, combine buttermilk, salt, pepper, paprika, garlic powder, and onion powder. Add chicken breasts, cover, and refrigerate for at least 2 hours or overnight.

    Prepare the Coating

    In a separate bowl, season flour with salt, pepper, and paprika.

    Fry the Chicken

    Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from buttermilk, dredge in flour, and fry until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Collard Greens

    Sauté Aromatics

    In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until softened.

    Cook the Greens

    Add chopped collard greens and chicken broth. Season with salt and pepper. Simmer for about 30 minutes until greens are tender.

Mac n’ Cheese

    Cook the Macaroni

    Boil elbow macaroni according to package instructions. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, melt butter. Stir in flour to create a roux. Gradually whisk in milk and bring to a simmer. Add shredded cheddar cheese, stirring until melted and smooth.

    Mix the macaroni with the cheese sauce. Season with salt and pepper.

Mashed Potatoes and Gravy

    Prepare the Potatoes

    Boil cubed potatoes in salted water until tender. Drain and return to pot.

    Add butter and milk to the potatoes. Mash until smooth and creamy, seasoning with salt and pepper.

    In a separate saucepan, whisk together chicken broth and flour over medium heat until thickened. Pour over mashed potatoes when serving.
