In a large bowl, soak the chicken thighs in buttermilk for at least 4 hours or overnight for best results.

In a separate bowl, combine flour, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.

Fry the Chicken
Heat oil in a deep skillet or frying pan over medium-high heat. Once hot, carefully add the chicken pieces and fry until golden brown and cooked through, about 8-10 minutes per side. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Drain and Rest
Remove the fried chicken and transfer to a wire rack or paper towels to drain excess oil. Let rest for a few minutes.
