Bake the Potatoes
Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly, then prick them with a fork several times. Rub the skins with a little olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

Prepare the Skins
Once the potatoes are cool enough to handle, cut them in half lengthwise. Use a spoon to scoop out most of the flesh, leaving about 1/4 inch of potato in the skin to help it hold its shape.

Season and Bake Again
Brush the insides of the potato skins with olive oil and season with salt and pepper. Place the skins cut-side down on a baking sheet. Bake for an additional 10-15 minutes, or until they are crispy and golden brown.

Add Toppings
Remove the potato skins from the oven and sprinkle with shredded cheddar cheese, crumbled bacon, and sliced scallions. Return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
