Cooking Instructions

  1. 1

    Cook the Bacon

In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

  2. 2

    Sauté Vegetables

Add the chopped onion and celery to the pot with the bacon drippings. Sauté for about 5 minutes until softened.

  3. 3

    Add Potatoes and Clam Juice

Stir in the diced potatoes and clam juice. Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are tender.

  4. 4

    Incorporate Clams and Seasonings

Add the chopped clams, heavy cream, butter, salt, black pepper, thyme, and bay leaf. Stir well and simmer for an additional 10 minutes.

  5. 5

    Finish and Serve

Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with the crispy bacon.
