    Sear the Lamb

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the lamb cubes and sear until browned on all sides. Remove the lamb and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic and cook for an additional minute.

    Combine Ingredients

    Return the browned lamb to the pot. Stir in the carrots, potatoes, tomato paste, and herbs (bay leaves and rosemary).

    Add Broth

    Pour in the broth, season with salt and black pepper to taste, and bring to a boil.

    Simmer

    Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the lamb is tender and the flavors have melded.

    Serve

    Taste and adjust seasoning if necessary. Serve hot in bowls, garnished with fresh herbs if desired.
