Prepare the Batter
In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the Guinness beer until the batter is smooth and free of lumps. Let it rest for about 15 minutes.

Heat the Oil
In a large, deep pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Fish
Dip each haddock fillet into the batter, coating it evenly. Carefully place the battered fish into the hot oil, frying them in batches for about 4-5 minutes or until golden brown and cooked through. Remove the fish and drain on paper towels.

While the fish is frying, cook the frozen French fries according to package instructions until crispy and golden.

On a plate, serve the fish alongside the French fries, cole slaw, tartar sauce, and a drizzle of malt vinegar to taste.
