Marinate the Chicken
In a large bowl, combine the buttermilk, hot sauce, paprika, garlic powder, salt, and black pepper. Whisk until well blended. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare for Frying
Once the chicken is marinated, remove it from the refrigerator. In a separate bowl, place flour and season it with additional salt and pepper if desired.

Coat the Chicken
Heat oil in a deep skillet or fryer to 180°C (350°F). Remove each chicken thigh from the marinade, allowing excess to drip off, then dredge it in the seasoned flour to thoroughly coat.

Fry the Chicken
Carefully place the coated chicken thighs in the hot oil. Fry in batches for about 6-8 minutes or until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 75°C (165°F).

Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
