If using fresh tomatoes, chop and blend them to make a purée. If using canned tomatoes, just pour them into a saucepan.
In a medium saucepan, combine the tomato purée, apple cider vinegar, brown sugar, salt, onion powder, garlic powder, allspice, cinnamon, paprika, black pepper, and water.
Bring the mixture to a simmer over medium heat. Stir occasionally to prevent sticking.
Reduce the heat to low and simmer for about 30 minutes, or until the ketchup thickens to your desired consistency. If you want it thicker, mix cornstarch with a little water and stir it into the ketchup.
Remove from heat and let cool. Transfer to a jar or bottle and refrigerate. The flavors will develop over time, so it's best to let it sit for at least a few hours before using.
