Asparagus and Hollandaise Sauce

Prepare the Asparagus
Wash the asparagus under cold water, then trim the tough ends.

Steam the Asparagus
Place the asparagus in a steamer basket over boiling water. Cover and steam for 4-6 minutes, or until bright green and tender but still crisp.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Whisk continuously until the mixture thickens.

Add Butter
Slowly drizzle in the melted butter while continuing to whisk. Keep whisking until the sauce is smooth and creamy. Season with salt and a pinch of cayenne pepper.

Serve
Arrange the steamed asparagus on a plate and drizzle the hollandaise sauce over the top. Serve immediately.
