    Prepare the Beef Tenderloin

    Preheat the oven to 400°F (200°C). Season the beef tenderloin with salt, black pepper, and fresh thyme. Heat olive oil in a skillet over medium-high heat. Sear the beef tenderloin on all sides until browned (about 3-4 minutes per side). Transfer the skillet to the preheated oven and roast for 15-20 minutes for medium-rare. Remove from the oven, cover with foil, and let rest for 10 minutes.

    Make the Wine Reduction

    In a saucepan, combine red wine, white wine, and cooking sherry. Bring to a boil over medium heat, then reduce to a simmer. Cook until the mixture has reduced by half (about 15-20 minutes). Remove from heat and set aside.

    Prepare the French Bread

    While the beef is resting, slice the French bread in half lengthwise. Spread butter on the inside of the bread and toast it lightly in a skillet or under a broiler until golden brown.

    Assemble the Sandwich

    Slice the beef tenderloin thinly. Layer the sliced beef on the toasted French bread and drizzle with the wine reduction. Close the sandwich and cut into portions.

    Serve the Chateau Sandwich warm with extra wine reduction on the side for dipping.
