    Prepare the Ribeye

    Season the ribeye steaks with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Once hot, add the ribeye steaks and sear for 4-5 minutes on each side for medium-rare doneness.

    Make the Wine Reduction

    In the same skillet, add the red wine, white wine, and port wine. Bring to a boil, scraping up any browned bits from the bottom of the skillet. Reduce the heat and let it simmer until the liquid is reduced by half, about 10-15 minutes. Strain the sauce and set aside.

    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk the egg yolks and lemon juice until pale. Place the bowl over a pot of simmering water (double boiler) and slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Season with cayenne pepper, salt, and pepper to taste.

    Serve

    Plate the ribeye steaks, drizzle the wine reduction over them, and serve with hollandaise sauce on the side.
