Make the Crepe Batter
In a mixing bowl, whisk together the flour, eggs, milk, water, lemon zest, lemon juice, and salt until smooth. Stir in the melted butter. Let the batter rest for at least 30 minutes.

Cook the Crepes
Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour about 1/4 cup of the batter into the skillet, tilting to spread it evenly. Cook for about 2 minutes or until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter.

Prepare the Cream Cheese Filling
In a bowl, mix the cream cheese and powdered sugar until smooth and creamy.

Assemble the Crepes
Spread a generous spoonful of the cream cheese mixture onto each crepe, then fold or roll them up. Serve with fresh blueberries on top, if desired.
