Preparing the Filet Mignon

    Sear the Steak

    Preheat a skillet over medium-high heat. Add olive oil. Season the filet mignon with salt and black pepper. Sear the steak for 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Making the Three Wine Reduction

    Combine Ingredients

    In the same skillet, add minced shallots and cook until softened. Pour in red wine, white wine, and port wine. Bring to a boil and reduce to a simmer.

    Reduce the Sauce

    Let the sauce reduce by half, stirring occasionally. Finish with butter, stirring until melted. Set aside.

Preparing the Hollandaise Sauce

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water, whisking constantly until the mixture thickens.

    Add Butter

    Slowly drizzle in the melted butter while whisking, until the sauce is thick and creamy. Season with salt and cayenne pepper.

Serving

    Plate the Dish

    Slice the filet mignon and arrange on a plate. Drizzle the three wine reduction over the steak and top with hollandaise sauce.
