    Prepare the Ground Beef

    In a skillet over medium heat, add olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat.

    Add Taco Seasoning

    Stir in the taco seasoning with 1/2 cup of water. Let simmer for about 5 minutes, or until the mixture thickens.

    Prepare the Enchiladas

    In a separate pan, take a flour tortilla, add a portion of the seasoned beef and sprinkle with cheese. Roll up the tortilla and place it seam-side down in a baking dish. Repeat until tortillas are used.

    Bake the Enchiladas

    Sprinkle remaining cheese over the top of the enchiladas. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, until cheese is melted and bubbly.

    Assemble the Tacos

    While the enchiladas are baking, fill taco shells with seasoned beef, shredded lettuce, diced tomatoes, and a dollop of sour cream.

    Serve the tacos alongside the baked enchiladas and a side of refried beans or rice.
