Prepare the Chicken

Season the chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.

Sauté the Onions

In the same skillet, add sliced onion and sauté until softened and translucent, about 4-5 minutes.

Combine Chicken and Onions

Return the cooked chicken to the skillet with the sautéed onions. Pour the cheese sauce over the chicken and onions, allowing it to melt and coat the chicken evenly.

Prepare Serving Plates

On serving plates, place a scoop of cooked rice, a handful of lettuce, and a dollop of sour cream. Add diced tomatoes on the side.

Serve

Place the cheesy chicken mixture on top of the rice. Serve with warm tortillas on the side for wrapping.
