Prepare the Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and follow package instructions, usually adding water and simmering.

Assemble the Burrito
Lay a flour tortilla flat and add a portion of the seasoned beef in the center. Top with shredded cheese, then roll the tortilla tightly, folding in the sides as you go.

Bake the Burrito
Preheat the oven to 350°F (175°C). Place the rolled burritos seam-side down in a baking dish. Pour red enchilada sauce over the burritos and sprinkle with remaining cheese. Bake for 15-20 minutes until cheese is melted and bubbly.

Prepare Rice and Beans
Cook rice according to package instructions. Heat canned beans in a saucepan over medium heat until warm.

Plate the burritos alongside the rice and beans. Top the burritos with lettuce, sour cream, and diced tomatoes before serving.
