1. Roast the Garlic

Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast for about 30 minutes until soft and fragrant. Allow to cool, then squeeze the garlic from the skins.

2. Prepare the Polenta Croutons

Cook polenta according to package instructions. Once cooked, pour into a greased baking dish and let it cool. Once set, cut into cubes and bake in the oven at 425°F (220°C) for about 20 minutes until crispy.

3. Assemble the Salad

In a large bowl, combine mixed greens, halved cherry tomatoes, sliced kalamata olives, and roasted garlic. Add the crispy polenta croutons and diced mozzarella cheese.

4. Dress the Salad

Drizzle with balsamic vinaigrette and toss gently to combine. Adjust seasoning as needed.
