Prepare the Rice

Rinse the jasmine rice under cold water until the water runs clear. Cook according to package instructions, typically 1 cup rice to 1.5 cups water. Once done, fluff with a fork and let cool slightly.

Prepare the Vegetables

Slice the cucumber into thin rounds, the radishes into matchsticks, and the avocado into cubes. Rehydrate the wakame seaweed according to the package instructions.

Prepare the Dressing

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and sesame seeds until well combined.

Assemble the Poke Bowl

In a bowl, layer the jasmine rice as the base. Top with sliced cucumber, avocado cubes, edamame, wakame seaweed, and radish. Add your choice of protein (Tuna, Salmon, or Tofu) and drizzle with sesame dressing.
