Drain and Cool
Once cooked, drain the potatoes and let them cool for a few minutes until they are safe to handle.

Smash Potatoes
On a baking sheet lined with parchment paper, place the potatoes and gently smash each one with the back of a fork or a potato masher.

In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Drizzle this mixture over the smashed potatoes.

Preheat the oven to 425°F (220°C). Bake the smashed potatoes for about 20-25 minutes or until they are golden and crispy.

Remove from the oven, sprinkle the Parmesan cheese on top, and return to the oven for an additional 5 minutes until the cheese is melted.
