Cooking Instructions

  1. 1

    Prepare Potatoes

Wash and scrub the Red Bliss potatoes thoroughly. Place them in a large pot, cover with water, and add a pinch of salt.

  2. 2

    Boil Potatoes

Bring the water to a boil over medium-high heat. Cook the potatoes for about 15-20 minutes, or until they are fork-tender.

  3. 3

    Drain and Cool

Once cooked, drain the potatoes and let them cool for a few minutes until they are safe to handle.

  4. 4

    Smash Potatoes

On a baking sheet lined with parchment paper, place the potatoes and gently smash each one with the back of a fork or a potato masher.

  5. 5

    Add Toppings

In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Drizzle this mixture over the smashed potatoes.

  6. 6

    Bake

Preheat the oven to 425°F (220°C). Bake the smashed potatoes for about 20-25 minutes or until they are golden and crispy.

  7. 7

    Finish with Cheese

Remove from the oven, sprinkle the Parmesan cheese on top, and return to the oven for an additional 5 minutes until the cheese is melted.

  8. 8

    Serve

Remove from the oven, let cool slightly, and serve warm as a delightful side dish.
