Method

Prepare the Fries

    Cut and Soak Potatoes

    Cut the russet potatoes into thin fries and soak them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Drain and dry the potatoes. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 4-5 minutes. Drain on paper towels.

    Season with Truffle Oil

    Toss the hot fries with truffle oil, salt, and black pepper to taste.

Cook the Skirt Steak

    Prepare the Steak

    Rub the skirt steak with olive oil, salt, and black pepper on both sides.

    Grill or Pan-sear the Steak

    Preheat a grill or skillet over high heat. Cook the steak for about 3-4 minutes on each side for medium-rare. Remove and let rest for 5 minutes before slicing.

Make the Sauce au Poivre

    Sauté Shallots

    In a saucepan, melt the butter over medium heat. Add the minced shallots and sauté until softened, about 2 minutes.

    Add Peppercorns and Brandy

    Stir in the crushed black peppercorns and brandy. Cook until the brandy has reduced by half.

    Finish the Sauce

    Add the heavy cream and simmer until the sauce thickens. Season with salt to taste.
