Prepare the Blackened Fish
Preheat a skillet over medium-high heat. Coat the fish fillets with blackening seasoning on both sides. Add a tablespoon of oil to the skillet and sear the fish for about 3-4 minutes on each side or until blackened and cooked through. Remove from heat and let rest.

Prepare the Avocado Crema
In a blender, combine the avocado, sour cream, a pinch of salt, and lime juice. Blend until smooth and creamy. Adjust seasoning to taste.

Assemble the Tacos
Warm the corn tortillas in a dry skillet or microwave. Flake the blackened fish into pieces and place them in the center of each tortilla. Top with pineapple pico de gallo, avocado crema, sliced scallions, and micro cilantro.

Serve immediately with lime wedges on the side.
