Preparation Steps

    Prepare the Custard

    In a blender, combine ripe bananas, egg yolks, whole milk, heavy cream, granulated sugar, miso paste, vanilla extract, and a pinch of salt. Blend until smooth.

    Cook the Custard

    Pour the mixture into a saucepan over medium heat. Stir continuously until the mixture thickens and coats the back of a spoon (about 10-15 minutes).

    Cool the Custard

    Remove from heat and let the custard cool. Once cooled, transfer it to serving dishes and refrigerate for at least 2 hours.

    Make the Miso Caramel

    In a saucepan, combine sugar and water over medium heat. Cook without stirring until the mixture turns a deep amber color.

    Finish the Caramel

    Remove from heat and carefully whisk in additional miso paste until smooth. Allow to cool slightly before drizzling over the chilled custard.

    Prepare the Sesame Shortbread

    Make sesame shortbread cookies to serve alongside. Mix flour, sugar, sesame seeds, and butter, then bake until golden.
