Prepare the Mixture

In a bowl, combine the grated Parmesan cheese, black pepper, paprika or cayenne pepper, and cornstarch. Mix well until everything is evenly distributed.

Form the Croccantini

Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper. Using your hands or a scoop, form small mounds of the cheese mixture onto the prepared baking sheet, spacing them about 2 inches apart.

Bake

Drizzle olive oil over the mounds. Bake in the preheated oven for about 8-10 minutes or until the edges are golden and crispy.

Cool and Serve

Remove the croccantini from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve as a crunchy snack or appetizer.
