1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until softened.
2. Add Remaining Vegetables
Stir in the diced carrots, celery, zucchini, and green beans. Cook for an additional 5 minutes, stirring occasionally.
3. Combine Liquid Ingredients
Add the canned tomatoes with their juices, vegetable broth, and Italian seasoning to the pot. Bring the mixture to a boil.
4. Simmer the Soup
Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes.
5. Add Spinach and Pasta
Stir in the chopped spinach or kale and the pasta. Cook for another 10-12 minutes, or until the pasta is al dente.
6. Season and Serve
Season the soup with salt and black pepper to taste. Serve hot and enjoy your minestrone!
