1. Prepare the Dough
In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
2. Knead the Dough
Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
3. Prepare the Mushroom Topping
While the dough is rising, clean and slice the wild mushrooms. Sauté them in a skillet with a drizzle of olive oil over medium heat until they are tender and any liquid has evaporated. Add salt and pepper to taste.
4. Preheat the Oven
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
5. Shape the Pizza
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll or stretch the dough into a round shape about 12 inches in diameter. Transfer to a pizza peel or a baking sheet.
6. Assemble the Pizza
Spread the sautéed mushrooms evenly over the dough, then sprinkle with shredded mozzarella cheese. Drizzle with white truffle oil and season with black pepper. Top with chopped parsley.
7. Bake the Pizza
Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbling.
8. Serve
Remove the pizza from the oven, let it cool for a few minutes, slice, and serve hot.
