Preparation
Make the Custard
Preheat the oven to 325°F (160°C). In a saucepan over medium heat, combine the heavy cream, maple syrup, and vanilla extract. Heat until just below boiling, then remove from heat.
Mix Egg Yolks
In a mixing bowl, whisk the egg yolks with a pinch of salt until smooth. Gradually add the warm cream mixture to the egg yolks, whisking continuously to temper the eggs.
Strain the Mixture
Strain the custard mixture through a fine-mesh sieve into a large measuring cup or bowl to ensure a silky texture.
Bake
Bake in the preheated oven for about 30-35 minutes, or until the custard is set but still slightly jiggly in the center.
Cool and Chill
Remove the ramekins from the water bath and let cool to room temperature. Cover and refrigerate for at least 2 hours, or overnight.
Finishing Touch
Caramelize the Sugar
Sprinkle a thin layer of granulated sugar on top of each chilled custard. Using a kitchen torch, caramelize the sugar until it forms a crispy, golden crust. Allow to cool for a minute before serving.
