Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let sit for 10 minutes.

Season Rice
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve. Once the rice is done, transfer it to a bowl and gently fold in the vinegar mixture. Allow to cool.
Prepare Vegetable Filling

Wash and prepare all vegetables by julienning the cucumber, carrot, and red bell pepper. Slice the avocado and set aside.
Assemble the Rolls

Roll the Sushi
Place a nori sheet on a bamboo sushi mat, shiny side down. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange the julienned vegetables and spinach leaves in a line along the bottom of the rice. Roll the mat away from you tightly, pressing as you go. Seal the edge with a little water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce and wasabi on the side.
