Method

Preparation

  1. 1

    Select the Wagyu

Choose a high-quality A5 Wagyu beef cut, preferably from the Miyazaki Prefecture. Look for marbling and a rich red color.

  2. 2

    Season the Meat

Sprinkle sea salt and black pepper evenly over the entire surface of the Wagyu. Let it rest at room temperature for about 30 minutes to enhance the flavors.

  3. 3

    Preheat the Cooking Surface

Heat a cast iron skillet or grill pan over medium-high heat. Add olive oil and allow it to heat until shimmering.

  4. 4

    Cook the Wagyu

Sear the Wagyu for about 1-2 minutes on each side, depending on thickness. Aim for a medium-rare doneness to fully appreciate the flavor and tenderness.

  5. 5

    Rest the Meat

Remove the Wagyu from the heat and let it rest for at least 5 minutes. This allows the juices to redistribute for better flavor.

  6. 6

    Slice and Serve

Using a sharp knife, slice the Wagyu against the grain into thin pieces. Serve immediately with fresh herbs on the side if desired.
