Prepare the Stock

In a large pot, melt 2 tablespoons of butter over medium heat. Add lobster shells and sauté for about 5 minutes until fragrant. Add the white wine, bring to a boil, and reduce by half. Add the fish stock and simmer for 30 minutes. Strain and set aside.

Sauté Vegetables

In the same pot, melt the remaining 2 tablespoons of butter over medium heat. Add onion, celery, and carrot. Sauté for about 5 minutes until softened. Stir in garlic and cook for another minute.

Create the Bisque Base

Add tomato paste to the pot and stir well. Gradually add the strained lobster stock to the vegetable mixture. Bring to a simmer and cook for 15 minutes.

Blend the Soup

Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

Finish the Bisque

Stir in the heavy cream, lobster meat, salt, black pepper, and cayenne pepper. Heat through without boiling.

Ladle the bisque into bowls and garnish with fresh parsley. Serve warm and enjoy!
