Preheat the Oven

Preheat your oven to 400°F (200°C).

Prepare the Herb Mixture

In a bowl, combine the parsley, dill, thyme, minced garlic, lemon zest, olive oil, salt, and black pepper. Mix well until a paste forms.

Prepare the Branzino

Clean the branzino and pat it dry with paper towels. Make diagonal slits on both sides of the fish.

Season the Fish

Rub the herb mixture generously inside the cavity and on the outside of the fish, ensuring it gets into the slits.

Roast the Fish

Place the branzino on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the fish flakes easily with a fork.

Remove the fish from the oven, let it rest for a few minutes, then serve with lemon wedges.
