Cooking Instructions

1

Prepare the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently until they are caramelized, about 30-40 minutes.

2

Add Garlic and Wine

Once the onions are caramelized, add the minced garlic and cook for an additional 2 minutes. Then pour in the white wine, scraping the bottom of the pot to deglaze.

3

Add Broth and Seasonings

Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

4

Prepare the Baguette

While the soup is simmering, slice the baguette into 1-inch thick slices and toast them until golden brown.

5

Serve the Soup

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a toasted baguette slice, and sprinkle with Gruyère cheese. Place under the broiler until the cheese is bubbly and golden.
