    Make the Filling

    Peel and chop the potatoes, then boil them in salted water until tender. Drain and mash the potatoes. In a separate pan, sauté the onion in a bit of oil until translucent. Combine the mashed potatoes with the sautéed onions, salt, and pepper. Mix well and set aside to cool.

    Prepare the Dough

    In a mixing bowl, combine all-purpose flour, salt, and egg. Gradually add water until a smooth dough forms. Knead the dough on a floured surface for about 5 minutes until elastic. Cover with a towel and let it rest for 30 minutes.

    Assemble the Vareniki

    Roll the dough out on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter or glass. Place about a tablespoon of potato filling in the center of each circle. Fold the dough over to form a half-moon shape and pinch the edges to seal tightly.

    Cook the Vareniki

    Bring a large pot of salted water to a boil. Drop the vareniki into the boiling water in batches, being careful not to overcrowd the pot. Cook for about 5-7 minutes or until they float to the surface. Remove with a slotted spoon and drain.

    Serve the vareniki hot with a dollop of sour cream and enjoy with a smile!
