Make the Dough

In a large bowl, mix the flour and salt. Gradually add water and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling

In a bowl, combine ground beef, ground pork, chopped onion, minced garlic, cilantro, salt, black pepper, and water. Mix thoroughly until well combined.

Roll and Fill Dumplings

Divide the dough into small pieces and roll each piece into a thin circle. Place a tablespoon of filling in the center of each circle. Gather the edges and pinch to seal, creating a pleated dumpling shape.

Cook the Hinkali

Bring a large pot of salted water to a boil. Add dumplings in batches and cook for about 10-12 minutes until they float and are cooked through. Remove with a slotted spoon.

Prepare the Adzhika Sauce

In a bowl, mix pureed tomatoes, chopped chili peppers, minced garlic, cilantro, salt, and vinegar. Adjust seasoning to taste.

Serve

Serve the Hinkali hot with a side of Adzhika sauce for dipping.
