The classic cold soup is a mix of mostly raw vegetables (like cucumbers, radishes and spring onions), boiled potatoes, eggs, and a cooked grass fed beef, filled with kvass (which is a non-alcoholic beverage made from fermented black or rye bread) or Kefir (fermented milk drink with a sour taste).

Prepare the Vegetables
Wash and chop the cucumbers, radishes, and spring onions into small pieces.

Prepare the Beef
If not already done, shred or chop the cooked grass fed beef into small pieces.

Combine Ingredients
In a large bowl, combine the chopped cucumbers, radishes, spring onions, diced potatoes, chopped eggs, and cooked beef.

Add Kvass or Kefir
Pour the kvass or kefir over the mixture and stir well to combine.

Season
Add salt, black pepper to taste, and fresh dill if using. Stir again.

Chill and Serve
Refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled.
