Prepare the baking sheets
Line two baking sheets with parchment paper and set aside.

Make the macaron batter
In a mixing bowl, combine almond flour and powdered sugar. In a separate bowl, beat the egg whites until frothy. Gradually add granulated sugar, whipping until stiff peaks form. Add vanilla extract and food coloring if using. Gently fold in the almond flour mixture until fully combined.

Pipe the macarons
Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto the prepared baking sheets, leaving space between each. Tap the baking sheets on the counter to release any air bubbles.

Let them rest
Let the piped macarons sit at room temperature for 30-60 minutes, until a skin forms on the surface.

Bake the macarons
Preheat the oven to 300°F (150°C). Bake the macarons for 15-20 minutes, or until they have risen and have a hard shell. Allow them to cool completely on the baking sheets.

Fill the macarons
Once cooled, fill with your choice of filling (Almond cream, Strawberry jam, Nutella, or Pistachio cream) and sandwich them together. Enjoy!
