Chicken cooked in its own juices with zucchini and carrots. Usually served over mashed potatoes, but it is just as tasty on rice, pasta or buckwheat.

Sauté the Chicken
Heat olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper. Add the chicken to the skillet and sauté until golden brown on both sides, about 5-7 minutes. Remove the chicken and set aside.

Combine and Simmer
Return the chicken to the skillet. Pour in the chicken broth and add thyme. Bring to a gentle simmer, cover, and let it cook for 25-30 minutes, or until the chicken is cooked through and tender.

Serve
Taste and adjust seasoning if necessary. Serve the chicken ragout over mashed potatoes, rice, pasta, or buckwheat.
