Prepare the Chicken Mixture
In a large bowl, combine the ground chicken thighs, bread crumbs, egg, garlic powder, onion powder, salt, black pepper, and chopped parsley. Mix until well combined.

Shape the Cutlets
Divide the mixture into equal portions and shape each portion into a cutlet or patty, about 1/2 inch thick.

Heat the Oil
In a large skillet, heat oil over medium heat. Ensure there is enough oil to cover the bottom of the skillet.

Fry the Cutlets
Once the oil is hot, carefully add the cutlets to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
