Golubtsi is a cabbage roll dish, consisting of cooked cabbage leaves wrapped around meat fillings seasoned with garlic, onion, and spices. Sour cream is the best companion to this dish.

Prepare the Cabbage
Bring a large pot of water to a boil. Carefully remove the core of the cabbage and place the whole head in the boiling water for about 5-7 minutes or until the leaves are pliable. Remove the cabbage and let it cool. Once cool, carefully peel off the leaves and set aside.

Prepare the Filling
In a large mixing bowl, combine ground beef or pork, chopped onion, minced garlic, uncooked rice, salt, black pepper, and dried dill. Mix well until all ingredients are evenly incorporated.

Assemble the Rolls
Take one cabbage leaf and place about 2 tablespoons of filling at the base of the leaf. Roll it tightly, tucking in the sides as you go. Repeat with the remaining leaves and filling.

Cook the Rolls
Preheat your oven to 180°C (350°F). In a large baking dish, spread some tomato sauce at the bottom. Place the rolls seam-side down in the dish, then cover with the remaining tomato sauce. Cover the dish with foil and bake for about 1 hour.

Serve
Remove from the oven, let cool for a few minutes, and serve warm with a dollop of sour cream on top.
