    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin fries, approximately 1/4 inch thick.

    Soak the Fries

    Place the cut fries in a large bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes them crispier.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries in batches to the hot oil. Fry them for about 4-5 minutes or until golden brown and crispy.

    Drain the Fries

    Remove the fries from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.

    Season the Fries

    While the fries are still hot, drizzle them with truffle oil, and season with sea salt and freshly ground black pepper. Toss well to combine.

    If using, chop fresh parsley and sprinkle it over the fries for added flavor and color.
