Prepare the Fish

Preheat the oven to 375°F (190°C). Clean and gut the whole fish, removing any scales and innards. Rinse under cold water and pat dry with paper towels. Place the fish on a baking sheet lined with parchment paper.

Make the Stuffing

In a large mixing bowl, combine cooked quinoa, chopped spinach, diced red bell pepper, chopped onion, minced garlic, crumbled feta cheese, lemon juice, olive oil, salt, black pepper, and fresh herbs. Mix well until all ingredients are combined.

Stuff the Fish

Gently stuff the prepared fish with the quinoa mixture, filling it generously. Use toothpicks or kitchen twine to secure the opening if necessary.

Bake the Fish

Drizzle a little olive oil over the stuffed fish and season with additional salt and pepper if desired. Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
