Soft Shell Crab Preparation
Method
Cooking Instructions
- 1
Prepare the Crabs
Rinse the soft shell crabs under cold water and gently pat them dry with paper towels. Remove the gills and any residual innards.
- 2
Make the Breading
In a shallow dish, combine the flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.
- 3
Prepare the Wet Mixture
In another bowl, whisk together the eggs and buttermilk until fully combined.
- 4
Bread the Crabs
Dip each crab first into the wet mixture, letting excess drip off, then dredge in the flour-cornmeal mixture until evenly coated.
- 5
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
- 6
Fry the Crabs
Carefully place the breaded crabs in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and crispy.
- 7
Drain and Serve
Transfer the fried crabs to a plate lined with paper towels to drain excess oil. Serve hot with lemon wedges.
