    Prepare the Tomatoes

    Slice the green tomatoes into 1/4-inch thick slices. Lay them out on a paper towel and sprinkle with salt. Let sit for about 10 minutes to draw out excess moisture.

    Set Up the Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine the cornmeal, paprika, black pepper, and a pinch of salt.

    Bread the Tomatoes

    Dredge each tomato slice in the flour, shaking off the excess. Dip into the egg mixture, allowing excess to drip off, and then coat with the cornmeal mixture, pressing gently to adhere.

    Fry the Tomatoes

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches. Fry for about 3-4 minutes on each side or until golden brown and crispy.

    Drain and Serve

    Remove the fried tomatoes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
