Prepare the Crabmeat Filling
In a mixing bowl, combine the crabmeat, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, breadcrumbs, and shredded cheese. Mix gently to combine. Season with salt and black pepper to taste.

Prepare the Flounder
Preheat the oven to 375°F (190°C). Place the flounder fillets on a clean surface and season with salt and black pepper.

Stuff the Flounder
Divide the crabmeat filling evenly among the flounder fillets, placing it in the center of each fillet. Carefully fold the edges of the fillets over the filling to create a pocket.

Remove from the oven and let the flounder rest for a few minutes before serving. Enjoy your Flounder Imperial hot with a side of vegetables or rice.
