Prepare the Chicken
Preheat your oven to 400°F (200°C). In a large bowl, combine olive oil, minced garlic, lemon juice, chopped rosemary, salt, and black pepper. Add the chicken thighs and coat them well with the marinade. Let it sit for at least 15 minutes.

Sear the Chicken
In a large oven-safe skillet, heat a bit more olive oil over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 5-7 minutes. Flip and sear for an additional 3-4 minutes.

Add Vegetables and Broth
Remove the chicken from the skillet and set aside. In the same skillet, add chopped vegetables and sauté for 3-4 minutes. Pour in the chicken broth, stir, and then return the chicken thighs to the skillet.

Bake the Dish
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
