Method

Kebab Preparation

  1. 1

    Marinate the Lamb

In a large bowl, combine cubed lamb, minced garlic, olive oil, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to coat the lamb evenly. Cover and refrigerate for at least 1 hour, or preferably overnight to allow the flavors to meld.

  2. 2

    Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Thread the marinated lamb onto the skewers, leaving a little space between each piece.

Vegetable Preparation

  1. 3

    Prepare the Vegetables

In a separate bowl, toss the bell peppers, red onion, and zucchini with olive oil, salt, and black pepper until evenly coated.

  2. 4

    Skewer the Vegetables

Thread the prepared vegetables onto separate skewers for grilling, alternating between different veggies for color.

Cooking

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill the Kebabs

Place the lamb kebabs on the grill. Cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.

  3. 7

    Grill the Vegetables

While the lamb is cooking, add the vegetable skewers to the grill. Grill for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

  4. 8

    Serve

Once cooked, remove the kebabs and vegetables from the grill. Serve hot, garnished with fresh chopped parsley.
