Chicken Marinade

Prepare the Marinade

In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, lemon juice, and plain yogurt. Mix well to create a marinade.

Marinate the Chicken

Add the chicken thighs to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight.

Cook the Chicken

Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Rest the Chicken

Once cooked, remove the chicken from the heat and let it rest for 5 minutes before slicing it into thin strips.

Make the Garlic Sauce

In a small bowl, mix together minced garlic, mayonnaise, lemon juice, and salt until well combined. Adjust seasoning to taste.

Prepare the Pickles

Slice cucumbers and carrots into thin rounds and set aside for serving.

Assembly

Assemble the Shawarma

Lay out the pita bread or flatbread on a serving plate. Top with sliced chicken, garlic sauce, and pickles. Roll or fold the bread around the filling and serve immediately.
