Marinade Preparation

Combine Ingredients
In a large mixing bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, lemon juice, and chopped parsley. Mix well until all ingredients are evenly blended.

Marinate the Lamb
Add the cubed lamb shoulder to the marinade mixture. Toss to ensure the lamb is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
Grilling the Kebabs

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, skip this step.

Skewer the Lamb
Preheat your grill to medium-high heat. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

Grill the Kebabs
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness. The internal temperature should reach at least 145°F (63°C) for medium.
Serving

Prepare Serving Platter
While the kebabs are grilling, warm the pita bread on the grill for about 1-2 minutes per side until slightly charred and pliable.

Assemble the Dish
Once the kebabs are done, remove them from the grill and let them rest for a few minutes. Serve the kebabs alongside the warm pita bread, tzatziki sauce, sliced onions, tomatoes, and lettuce leaves.
