Falafel Preparation

Prepare the Chickpeas
Drain and rinse the canned chickpeas thoroughly under cold water. Pat dry with a kitchen towel.

Chill the Mixture
Transfer the falafel mixture to a bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up.

Form the Falafel Balls
Once chilled, use your hands to form the mixture into small balls or patties, about 1.5 inches in diameter.

Fry the Falafel
Carefully add the falafel balls to the hot oil in batches, frying for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Combine Sauce Ingredients
In a small bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth. Adjust consistency with more water if desired.
