Prepare the Hibiscus
In a small saucepan, bring 2 cups of water to a boil. Add the dried hibiscus flowers and simmer for 10 minutes. Strain and let cool.

Prepare the Tuna
While the hibiscus is cooling, slice the fresh tuna into thin sashimi-style pieces and place them on a serving plate.

Make the Dressing
In a bowl, combine the cooled hibiscus liquid, fresh lime juice, olive oil, jalapeño, salt, and black pepper. Whisk to combine.

Serve immediately, garnished with additional cilantro if desired.
